Irish Potatoes

Ok so I know they don’t sound all that exciting but trust me you’re going to thank me later when you’re chomping down on these little nuggets so fast you finally realize what St Patty’s day is really about- the food.
Yeah yeah green beer, whiskey, all that jazz & a pot of gold, but let’s be honest; Don’t we drink whiskey, guzzle beer, & search for that pot of gold every other day any way? Yes, for me holidays will always be about the food & who you’re sharing it with….. but these bad boys, be warned, you’re not going to want to share. Okay so the basics, you’ll need:

1/4 cup Butter (softened)
4 oz. Cream Cheese (softened)
4 cups Confectioners’ Sugar
2 1/2 cups Shredded Coconut
1 tsp Vanilla Extract
3 tbsp Cinnamon & 2 tbsp granulated sugar

Here’s what you do…

Cream the butter and cream cheese together until smooth.
Then, add the vanilla extract and beat until combined.
Next, add the confectioners’ sugar one cup at a time until combined and smooth. You may need to scrape down the sides of the bowl in between additions.
Lastly, and this is optional, add the coconut and mix until combined.
Now try to be patient & chill the dough for 20-30 minutes.
FInally, roll the dough into balls “potatoes” about the size of your thumb and finish them off by rolling in cinnamon sugar.
