Whether or not you’re a fan of the show “How I Met Your Mother” you’ll definitely be a fan of the cookies that debuted in the episode that finally revealed (after oh so many seasons) how he met their mother.  The cookies are described as a delicious blend of peanut butter, chocolate chip, and caramel & are so good that they are eaten all in one bus sitting by Lily, hence the name: “Sumbitch Cookies.”  I’m sure you care less about the story of how their meet cute played out than how to recreate these amazing little morsels of heaven.  Wait no more, the recipe is here.

HOWEVER, i should warn you that the cookies in the show are thin & crispy but I was in the mood for chunky thick cookie goodness so the recipe below will reflect that, making what you see in the photograph above.

Prep time: 10 mins

Bake time: 10-12 mins

Recipe Yields: 26-38 depending on how big you like your cookies (my batch total was 37)

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup creamy peanut butter
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 26-38 Rolos or Caramel filled Hershey Kisses or any other caramel filled chocolate candy you can find in your local supermarket (1 caramel stuffed chocolate candy per cookie).  We used Rolos – we were also one short because Sarah got hungry in traffic on her way over haha.

Directions:

  1. Preheat oven to 350° (that’s 180 for those of us baking in a celsius world) & line your baking sheet with parchment paper
  2. In a bowl (if you have a mixer feel free to use your paddle attachment- I just used my spatula & mixed by hand) cream together your butter and peanut butter. Add the sugars, and mix until smooth.
  3. Mix in the egg and vanilla, being sure to scrape down the sides to evenly incorporate all the ingredients.
  4. Add the flour, baking soda, and salt, and mix until combined.
  5. Stir in the chocolate chips (do this by hand if you’ve been using your paddle mixer)
  6. Using a cookie scoop or a regular kitchen spoon if you don’t have one, scoop out dough and roll into about a one inch ball.  Flatten the ball of dough between your palms
  7. Place an unwrapped caramel candy in the center of the dough & wrap the sides up over the candy covering it completely and roll into a ball. Place each dough ball on the baking sheet two inches apart. Repeat process until dough is gone.
  8. Bake for 10-12 minutes until golden brown (i suggest checking them at 10 minutes), remove and let them rest for 2-3 minutes before transferring to a cooling rack. Then devour accordingly.

Sarah came over on one of my relaxing recovery days at home & between our indulgent movie marathon (That Awkward Moment, Beauty & the Beast , The Breakfast Club,  & Only God Forgives) we decided to whip these babies together 13 cookies at a time before pretending to nonchalantly photograph them for Instagram before admittedly tearing into them like we hadn’t spent all day snacking on a charcuterie platter (yeah, we’re fancy like that in the Starling household).  Anyway I suggest making one batch of these before doubling the batch a day or two later when all your friends & family members come crawling out of the woodwork asking for a box or two.  A word to the wise?  Make sure you save a box all for yourself, you can thank me later.
